BOILED FRUIT CAKE

 

 

 

 

Ø     4oz/120g                     Butter

Ø     4oz/120g                     Soft brown sugar

Ø     8oz/240oz                   Self raising flour

Ø     12oz/360g                   Mixed dried fruit

Ø     2                                  Eggs

Ø     1 cup                           Water

Ø     half teaspoon               Mixed spice

 

Method:

 

Put water, butter, fruit and sugar into a pan and bring to the boil.  Simmer for 15 minutes.  Allow cooling, then adding lightly beaten eggs and finally sifting & mixing in the flour and mixed spice..

Put into a greased and lined 7” cake tin.

Bake for approximately 90 minutes at 300F/ 150C, Gas 5.  adjust to own oven.

 

This is a tasty cake and incredibly easy to make!
