Tomato Soup with a dash of Tabasco to warm you up Recipe

2 Servings

 

6oz/175 ripe tomatoes

18 fl oz (510ml) Fresh Tomato Juice

1 tablespoon Worcester sauce

1-tablespoon balsamic vinegar

Juice of 1 lime

4 drops of Tabasco

Salt & freshly milled black pepper

 

To show off to guests add the following garnish when serving!

1 medium ripe tomato

Finely chopped cucumber [7.5cm]

2 teaspoons of vodka

¼ teaspoon of garlic salt

2 more dashes of Tabasco sauce

 

Pour boiling water over the tomatoes- leave for 1 minute. Drain and de skin.

Set aside the 1 tomato for the salsa

Finely chop rest of the tomatoes

Add to medium saucepan and simmer gently for about 3 minutes.

Pour in Tomato juice, and rest of soup ingredients- taste and season you may need another dash of Tabasco and more lime? 

 

If you want to make the salsa:

Cut the reserved skin tomato in half

Squeeze out the seeds and dice the flesh

Mix tomato & the cucumber, vodka garlic salt &Tabasco sauce.

 

Bring back soup to simmering point, ladle in swarmed soup bowls, and spoon in the salsa.

You can always add a few sprigs of watercress just to finish off?
