Turkey Burgers with Pepper & blue cheese sauce

Makes 6 burgers takes 10 minutes to make 12-15 minutes to BBQ

1 tablespoon Olive oil

 

1 Garlic clove

crushed

1 shallot

finely chopped

750g turkey mince

or Chicken

75g fresh breadcrumbs

 

Flour

for binding

Rocket

for garnish

Vegetable oil

fro brushing

6 burger buns

try garlic Pitta bread pockets- warmed in foil on BBQ for 1 minute

Heat oil in frying pan, add garlic & shallot cook for 1- 2 minutes until softened. place on kitchen paper to cool. Put cooled shallots & garlic in bowl add mince & breadcrumbs and season, mix well & divide into 6 portions. Flour hands and shape into 6 burgers.  Chill for 30 minutes.

Pepper & Blue Cheese Sauce

1 strip roasted red pepper from jar, drained

or from delicatessen

half a Jar 200ml Mayonnaise

could try garlic mayonnaise?

30g Blue cheese

Small handful of parsley + chives

Chop the peppers, put into a bowl stir in mayonnaise, crumble cheese add parley & chives season lightly.

Grill or BBQ burgers, 12- 15 minutes  brushing with oil turn once until tender.  Put burger in bun or pitta bread and top with pepper sauce and chopped rocket!
